Chef Richie Hirshen, for fifteen years Corporate Chef at Bella Sun Luci, in Chico, offers these recipes from the company kitchen, all of which make use of summer tomatoes. Richie has traveled the world with owner Mary Mooney, to four continents in 2019 alone. He develops recipes and posts videos of recipe preparation on Bella Sun Luci’s YouTube channel. He also helped develop Bella Sun Luci’s Sun Dried Tomato Chipotle Topper Sauce (featured in flatbread recipe on page 33), its Dried Tomato and Mushroom Risotto, and its Teriyaki and Cracked Pepper Tomato Jerky. That last joins the company’s Hickory Smoked Tomato Jerky and Sriracha Tomato Jerky in Bella Sun Luci’s newest line of plant-based tomato jerky. Only tomatoes grown and sun-dried in California feature in the company’s product line, and three generations of the family now work in the local business.
