SOUTHWEST CARROT SLAW

A delicious fall salad.

Ingredients

  • 8 carrots shredded
  • Bunch parsley chopped
  • 1 teaspoon chile powder
  • ¼ teaspoon dry mustard
  • ½ tablespoon salt
  • 1 tablespoon minced garlic
  • ½ cup rice vinegar
  • ½ cup olive oil

Instructions

  • Place shredded carrots and chopped parsley in a salad bowl. Whisk spices and garlic with vinegar. Slowly whisk in oil. Whisk again (or pour into a bottle and shakbefore adding to carrot salad. Add enough vinaigrette to make salad glisten. Mix well and serve!
