  • Good sized tomatoes 1 per person
  • Salt
  • Balsamic vinegar
  • Extra virgin olive oil
  • Fresh ground pepper


  • Halve some nice beefy tomatoes lengthwise. Sprinkle well with salt. Generously drizzle with balsamic vinegar and olive oil. Grind some good black pepper on top as well.
  • Place gently on BBQ, skin side down, cut side up. Do not touch! Let cook with lid closed. If you feel your tomatoes are too delicate to go directly on the grill, set them on tinfoil and grill away. Grill until slightly charred and caramelized.
